Lemon and Herb Winter Veggies


Ingredients:

  • 3 cups each of broccoli and cauli flower *
  • 1 cup of water
  • 1/4 vegan butter
  • 2 tbsp lemon juice
  • 1.5 tsp thyme
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsps onion powder *or 3tbsp diced chives*

Instructions:

  • Place broccoli and cauliflower in a pot with 1 cup of water and cover – just enough water to steam the veggies and not leach too much nutrients during cooking
  • Cook for about 5-10 minutes or until desired softness
  • Prepare butter, lemon and herb combination
  • Drain remaining water in veggies once cooked and combine seasoning
  • Mix well, and serve
