Tomato Basil Orzo

I must admit, this recipe has turned into one of my favourites. After doing a bit of searching of what pairs well with orzo, I successfully managed to cook this up with that I had in the kitchen and have it turn out amazing.
Ingredients:
- 3 cups orzo
- 2 tbsp minced garlic
- 6 tbsp olive oil
- 1 tsp chilli powder
- 3 tbsp basil
- 1 pound ground ground beef
- 1 tbsp steak seasoning
- 1 can of Italian stewed chunky tomatos
- 2 cups daiya dairy free mozza or cheddar cheese
Instructions:
Bring a pot of salted water to a boil following the orzo package instructions.
In a large pan on medium high, add olive oil and ground beef. Layer ground beef with 1/2 tbsp steak seasoning.
Once water boils, add the orzo and boil for approximately 6-8 minutes or until cooked. Drain and set aside 1/2 cup of the pasta water for sauce.
Once the beef has browned, flip and layer with the remaining amount of steak seasoning. Once fully cooked turn off heat.
In another large, deep skillet on medium heat, add 5 tbsp olive oil, garlic, and chilli powder.
Once the oil is hot, add cooked orzo and tomatoes, stir.
Add half the amount of saved pasta water, stir.
Add basil and let simmer for 2 minutes. Mix in ground beef.
Remove from heat, serve and garnish with daiya dairy free cheese.
Enjoy!
Thank you for these recipes! I need to eat diary free but I never do because I feel like it will be too hard!
