Pancakes

Ingredients:
- 2 egg
- 2.5 cup vanilla almond milk or alternative milk of choice
- 2 cup flour
- 1/4 cup sugar
- 3 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla
- Vegetable oil to cook
Instructions:
- preheat skillet with oil to medium heat
- Mix dry ingredients together in a bowl
- In a measuring glass add milk, egg, and vanilla and mix
- Create a well in the dry mixture, and slowly pour liquid mixture into it
- Whisk well so that there are no clumps left
- Pour about 1/2 cup of batter into skillet and cover for 1-2 minutes
- Flip and cook uncovered for an additional 1-2 minutes
- Repeat for rest of batter. Serves 2 adults.
** For less fluffy pancakes only had 1/2 tsp of baking soda instead. **
